3. Heat to a boil, then reduce the heat and simmer until the flavors have blended, about 20 minutes. Season with salt and pepper as desired.

SERVES 4 TO 6

1 tablespoon olive oil

1 cup chopped onion (red or yellow)

1 large organic apple (preferably Gala), cored and diced

1 cup chopped red, yellow, or green bell pepper (I use a combo of red and yellow)

1 tablespoon finely chopped garlic

¼ teaspoon cardamom

1 teaspoon cumin

½ teaspoon cinnamon

Pinch of cayenne pepper

½ cup chopped fresh cilantro

¼ cup fresh-squeezed orange juice

½ cup canned coconut milk

1 quart plus 1 cup vegetable

broth (organic preferred)

2 tablespoons organic maple syrup

5 cups peeled and chopped butternut squash, prebaked and cut into cubes

Coarse kosher salt, if desired

Fresh cracked pepper to taste
